Desserts are created by Claire Heitzler, named Gault & Millau Pastry Chef of the Year in 2013. The wine list is overseen by Xavier Thuizat, Meilleur Sommelier de France 2022 and Meilleur Ouvrier de France 2023, who works with Air France to curate a selection drawn from some of France's most respected wine producers.
